Every Knödel Tells a Story
It starts at 5 AM. Fresh spinach blanched to perfection. Day-old bread torn by hand. Farm eggs cracked into a bowl of ricotta and aged Parmesan. A pinch of nutmeg, sautéed shallots, a generous handful of chives.
Each Knödel is shaped by hand — no machines, no shortcuts. Gently poached in salted water until they float, then finished with nutty brown butter and a shower of Parmigiano Reggiano.
This is the recipe that traveled from an Austrian grandmother's kitchen to the streets of Zürich. And now, it travels to you.

About Knödelpuff
Knödelpuff was born from a simple idea: take the best recipe from an Austrian grandmother's kitchen and share it with the world — one dumpling at a time.
What started as a small stall at Zürich's Christmas markets quickly became a cult favorite. People lined up in the December cold, drawn by the glow of our neon sign and the irresistible aroma of brown butter and fresh herbs.
Today we're at festivals, markets, and private events all over Zürich. But every single Knödel is still shaped by hand, still made with the same obsessive attention to quality, and still served with that signature dumpling attitude.
Because great food doesn't need to be pretentious — it just needs to be real.
